Passionfruit Cordial

An excellent way to use an abundant crop!
Ingredients
* Pulp of 24 passionfruit
* 3 teaspoons of tartaric acid (available from
chemist)
* 3 cups sugar
* 3 cups of water
Utensils
Bowl, large saucepan, large strainer, plastic jug.
Method
Put passionfruit pulp in bowl and blend tartaric
acid through it
Gently heat water and sugar in large pan, stirring
until sugar is dissolved
Bring to boil and simmer for 20 mins.
Pour sweetened water into fruit pulp blend in bowl,
cover and leave for 24 hours.
Strain syrup through a large strainer into a plastic
jug
Pour mixture into sterilised bottles and store in
the fridge
Serve diluted as cordial.
This cordial is also delicious served on ice cream or in milkshakes

(Watermelon Punch - a summer drink)

Ingredients
* Watermelon
* Sugar to taste
* 1 brown coconut
Utensils
A big bowl, tablespoon or wooden spoon , 1 coconut grater , plate.
Method
Cut coconut in halves and grate them into the
plate.
Use tbsp to grate watermelon into bowl.
Remove seeds from grated watermelon.
Half grated coconut, use clean cloth or coconut
fibre to squeeze milk out of one half, add milk and another half of
grated coconut to watermelon.
Add 1+1/2 cups of sugar,then mix by stirring with
wooden spoon.
Add 3 cups of cold water and stir. Add more water
for a thinner punch or more people to serve.
Keep in freezer to cool or add ice and serve add ice
cream.
